Cuba 'Ono Catering is the brain child of brother and sister team Carlos Alvarez and Yvette Alvarez Anseeuw.  Their original intent was to open a Cuban restaurant in Hawaii.  But with limited funds and the daily challenges that life brings, Carlos and Yvette started Cuba 'Ono Catering - home based catering service specilizing in Cuban food and intimate dinner parties.

Well we're moving.  My husband just got orders and we're off to Washington DC.  I'm gonna miss all my friends here on island, especially my cooking school buddies and teachers.

Happy New Year!  I finished my first semester at the Culinary Institute of the Pacific in December. 
 
I completed the fundamentals of cookery class which many say is the hardest class in any culinary program.  I must agree, it is the hardest class I have ever taken and it includes my previous 5 years of college.  The techniques I learned in this class has allowed me a new confidence in my cooking.
From stocks and sauces to cooking the prefect egg, I now have the basics under my belt. With the basic understanding of food comes the ability to take it to new places.  I hope to do that with my food.
 
I must say that the highlight of the class for me had to be introducing them to authentic Cuban Black Beans and Dulce de Leche.
 
Now, I move on to Intermediate. I am very excited for this class.  It is going to be mostly short order/ lunch counter cooking.  The class is trying something new will be the first class to work with mostly hawaiian products.  If you are in the KCC area, stop by 220 Grill for lunch.

I am 2 weeks away from finishing my first module in Culinary school. Though I have learned alot it has been mostly in the classroom.  In 2 weeks I will be in my first kitchen class, Fundamental of Cookery, and I am very excited.  I realize that in this class I will have limited creativity but I can't wait to apply the techniques to my style of food.

So half a year has gone by since my last note.  The challenges of keeping Cuba 'Ono going has been tough, especially trying to do it by myself. If I wanted to keep the quality of the food at the highest level then I would have to limit our services.
 
In the fall, I will go back to school with the hopes to expand my culinary knowledge and turn it around to better serve you.  To add to the craziness, I have 2 year old, a 4 year old and a husband in the military.

Happy New Year! 2006 was a good year professionally and a challenging year personally. We met a lot of new clients this year and all made an impression on us.  Thank you for your support. 
 
We also saw the first Cuban restaurant come to the island, aloha Soul de Cuba. Congratulations and best of luck.
 
Personally, we lost our grandmother in November.  She was our inspiration in the kitchen and the one who taught us most of what we know.  We miss her everyday.  Two days prior to her death, my sister (pictured above on the left) gave birth to a beautiful baby boy.  Thus the circle of life continues.
 
At the begining of 2007, my brother and business partner Carlos left Hawaii to go back home.  He is working as a manager at Texas de Brazil. 
 
I am continuing with Cuba 'Ono catering here in Honolulu.  I hope you will consider us/me for your next party or get together.
